The Super-Salad For Runners

Whether you’re a regular pro runner, or a beginner looking to tune into a daily running routine, the one thing you absolutely want to make sure you’re getting right is your nutrient intake after sweating it out. We’ve decided to take a few leaves out of her book (with her permission, of course), to share them with you beautiful people out there; this is our little way of acknowledging and appreciating the steps you take towards a healthier lifestyle each day.

Today’s super salad is a delicious Chickpea Spinach Toss-up with Chilled Yogurt. This recipe calls for a little bit of prep the previous evening. You’ll need to soak the chickpeas in a pan of water overnight, so they’re soft and ready to eat by morning. You can, of course, opt for tinned chickpeas, but the fresher, the better.

To make this wholesome, plant-based, although not vegan recipe, here’s what you’ll need to lay out in your kitchen.

  • A bowlful of cooked chickpeas
  • ½ cup onions, finely chopped
  • 2 cups spinach leaves
  • ½ cup mixed bell peppers, finely chopped
  • 1 tbsp. mint leaves, finely chopped
  • 2 tbsp. fresh parsley, finely chopped
  • 4 tbsp. unflavoured yogurt, chilled
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. lemon juice
  • Salt and pepper, to taste

Chill a big empty bowl in the freezer before your run. After the run, extract the chilled bowl and combine chickpeas, onions, and bell peppers in it. Mix in the spinach leaves, mint leaves, and fresh parsley. Add the chilled yogurt, olive oil, lemon juice, salt, and pepper; then toss together gently. Taste to adjust the seasoning.

Consume chilled.

 This recipe is high in protein thanks to the chickpeas and spinach, it is rich in essential vitamins and minerals, and has a healthy amount of fat to balance out the meal.
